Tofu with veggies

Ingredients:

  • 12 oz of firm tofu,
  • 1/2 cup of snap peas,
  • 1/2 cup of celery,
  • 1/2 cup of mushrooms,
  • 1/2 cup of carrots,
  • 1/2 cup of green peppers,
  • 1/2 cup of tomatoes,
  • 2 cloves of garlic,
  • 3-4 tsp of light sodium soy sauce,
  • 1/3 tsp of sesame oil,
  • 4 oz of water or vegetable stock.

instructions:

  1. Quickly fry veggies on a pre-heated pan,  (if you want “crunchiness”, add oat bran), add soy sauce.
  2. Add tofu and fry for a few more minutes.
