- 1 lb salmon filets
- 2 Tbsp peach preserves (no added sugar)
- 1 Tbsp olive oil
- Juice of 1/2 lime
- 1 large jalapeno, sliced
- Salt, to taste
How to make it
- Preheat oven to 400° F.
- In a small bowl whisk together the preserves, olive oil, and lime juice.
- Sprinkle salmon with salt and place on a baking sheet skin side down. Top with half of the peach mixture and the lay a few slices of jalapeño across the top. Bake for about 5 minutes per half-inch of thickness.
- Half way through, brush with the remaining glaze
