Peach and jalapeño-glazed salmon

  • 1 lb salmon filets
  • 2 Tbsp peach preserves (no added sugar)
  • 1 Tbsp olive oil
  • Juice of 1/2 lime
  • 1 large jalapeno, sliced
  • Salt, to taste

How to make it

  1. Preheat oven to 400° F.
  2. In a small bowl whisk together the preserves, olive oil, and lime juice.
  3. Sprinkle salmon with salt and place on a baking sheet skin side down. Top with half of the peach mixture and the lay a few slices of jalapeño across the top. Bake for about 5 minutes per half-inch of thickness.
  4. Half way through, brush with the remaining glaze
